I’ve never done a brisket.

I did a Chuck steak for 48 hours once and then seared it on my big green egg. It was phenomenal. Plus I made a wine reduction sauce with the juices left in the bag that was great.

No one said it’s faster. And I would never do a brisket.

But for tougher cuts of meat or a bunch of steaks you want done all at once it’s a great tool.

I don’t get the hate.

I’ve been experimenting with cooking steak using a steam iron


There’s definitely a difference if you use steam or not


I’ve found using steam at the beginning

And then searing with the iron on high heat

Works best.

I’ve been putting aluminum foil under a 100% cotton cloth on the ironing board

Works best.

I usually understand why this is happening. I honestly don't here. I mean, are this many of you really not reading what's posted? I guess I have to ask, what position do you think I am taking that is so wrong here?
