Calculator states to use:
“1lb or 2.5 cups rice” and 5 cups water, 40oz
1lb = 16oz rice
2.5 cups = 20oz rice
Going by weight of rice, you’ll get 16oz rice/40oz water
Going by cups of rice, you’ll get 20oz rice/40oz water
What am I missing here?

I don’t know how the calculator is set up, but I measure 1 pound of rice as 2.333 cups.

1 pound of rice = 2.5 cups by volume.
Weight does not equate to volume.

1 cup rice, 1.5 cups stock is what I use. 2 cups rice, 3 cups stock. 3 cups rice, 4.5 cups stock. So forth, so on…
