I mean, the only difference between gumbo and jambalaya is roux vs no roux and cooking your rice in it or put it over rice, am I wrong? I've always thought about doing a gumbo and putting rice in it like a jambalaya but never pulled the trigger.

i've made something similar, but took the filling out of several links of boudin to substitute for the rice

Yep. Pretty much. And i’ve Used a little roux in my jam prep before. Color and flavor are excellent.

You would also never use pork in a gumbo

Andouille is made from pork and common in gumbo.

Huh? I use only pork. Pork shoulder and andouille with tasso on occasion.

Edit: I'm retarded and for some reason skimmed that and thought you were talking jambalaya

Your statement is dumb. Tasso also is excellent in gumbo, snuggled up next to that pork sausage.

Dude. You are smarter than this. Pork is not used as a standalone protien in a gumbo. When was the last time you make pork AND sausage gumbo? Never. You use chicken, turkey, quail, duck, etc. Don't play dumb.
