to be honest, the the few gumbos I looked at in the TD cookbook are pretty underwhelming

Totally subjective choice:

Gumbo
Chili
Chicken and dumplings
Soup
Chowder
White Beans and ham
Turkey and dressing
Ham soup
Lasagna


Lots of stuff

Some folks might think Ice Cream and why would you want to start a knife fight with them just because your opinion is different from them.

I don't know. As far as soup type meals it's up there for me

In the soup category I'd also add in pozole, pho, cauliflower soup

In what way? A traditional gumbo doesn't have a whole lot of variation.






While on the topic, what does the FDB think of mixing seafood with meats? I don't do it, but this woman at my work was talking about the gumbo she had in her freezer and said, "We throw all the good stuff in it too. Chicken.. shrimp.. crab.. sausage.. pork.. "

I thought it was odd to combine the seafoods and meats.

Last winter I swear we just ate gumbo, chili and either homemade tortilla, taco, or veggie soup

We got in a habit of cooking a ton on Sunday and just eating it throughout the week with a salad or sandwich.

So good!

Am I the only Louisianan that thinks gumbo is vastly overrated? I don't dislike it, but it's just kind of ok. I've always liked the creamy seafood bisques much more.

Same here. It's also one of my favorites to cook. The smell in the house can be mouthwatering .

I've heard this before. What if you smoke the duck first, like i plan doing? Shouldn't the cooking action cause the fat to render off?

Maybe you just haven't had good gumbo? Are you basing it off what people cook or restaurants? Because there isn't a single restaurant's gumbo i'd rather have over my own.

I love gumbo on a cold day but I just don't get the love for Pho. Maybe I got a bad bowl of it but it was very bland and pretty much seemed like a bowl of broth with a little noodles and a couple bits of beef. Was not a fan. What am I missing?
