I've had it a few times but never made it. Does anyone have a go-to chimichurri recipe? Planning to use it as a marinade on a flank/skirt steak

Thanks

tweak this recipe per your taste:
1 cup fresh Italian parsley
1 cup fresh cilantro
1/3 cup EVOO
1/4 cup red wine vinegar (more acidic taste) or 1/4 cup rice wine vinegar (sweeter taste)
3 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt

puree in food processor, refrigerate or serve at room temperature

This is perfect, but I’m a cilantro whore so I go all cilantro and no parsley.

Bon Appetit

Literally made this yesterday. Used it again today for another meal too.

That's not chimichurri.

2 cups parsley
5-6 garlic cloves, these two in food processor, 20-30 quick pulses

Add to that:

1/4 fine chopped red onion
1/3 cup EVOO
1/3-1/4 cup red wine vinegar
Pinch red pepper flakes
Pinch salt

Stir together let sit for an hour or two

These are all fine recipes.
Some of these flavors can be quite bold. You’ll need to try it out a few times to figure out what your pallet will enjoy.
Knife, cutting board, mortar and pestle will get better results, but might not be worth the extra effort.
Please, pretty please with sugar and a cherry on top, don’t waste this as a marinade. This is meant as a topping or accompaniment.

Thanks for everyone’s input

The Bon Appetit recipe is intended as a marinade (probably why there so much oil in it) so I’m going to roll with that, then use Got Blaze’s version as a sauce
