They arent open for lunch but yea havent you said on here that you practically never go out to bars at night and drink?

I really wish the olive or twist people would take over zee zee's. That's the perfect type of bar for that location. A place where you can get a drink and decent food but you don't want to be there at mid night

Olive or Twist is just crushing it at that current spot. They're by all the medical stuff at Essen/Perkins/Bluebonnet and they get the spillover from Rum House. There was a demand for a nice place in that area. They just posted a Tiki menu - that's making a comeback in the craft cocktail world and it plays off Rum House.

They were doing pretty good before Rum House. I used to work with one of the owners and he told me they were consistently exceeding sales expectations. I know every time I went in, in those days, they had good crowds.
But yeah, when Rum House came in, that kicked Olive or Twist up a bunch of levels.

Yeah, I'm a day drinker for sure. You won't ever find me out somewhere past about 10:00 drinking beers. But I'll go to Chimes for lunch, dinner or happy hour. Ditto for Bulldog, but not as often.

Again, nothing wrong with CBD. I'm just explaining why I don't frequent the place. But you'd think with all the time Tom spent remodeling the place, he could have put in a grill for some pub food. But if that's not his business model, so be it.

Big fan of Corporate Brew. Main reason is they have a ton of different beers and you can buy 3 different sizes of beer. They have like a 4oz taster so you can try and whole bunch of stuff.

They also do have food. It's sausage sandwiches that are actually pretty tasty but nowhere near Chimes quality food.

Im sure the thought crossed his mind but that has to be a whole new ballgame when you add in a kitchen to a bar, along with a lot more headaches.

I dont think Tom is trying to make a fortune with this beer bar. If he was, maybe the model would be more appealing to the masses.

I just think adding in food is more of a task than he is willing to do with the place, especially if it involves altering the building and shelling out a ton of money. I have no idea of the actual cost but I imagine for the first year it would have to be around 50k+ for equipment, building changes, and paying people to cook the food.

The Chimes also serves in 13oz glasses, which is what I always order.

Made that mistake once with my buddy you know at Bulldog after his drama went down. We killed about 6 pints of it then I think I got kicked out after getting into an altercation with some weirdo
