For years I thought it was the craziest thing and also thought my bf family were all crazy for doing so.

Couple years later.....tried it.... Can't eat it without ps now.

It's not a bayou parishes gumbo meal without at least three starches: rice, potato salad, and a lil french bread too.

yep potato salad in gumbo is a must for us. my wife is from the westbank and thinks we are insane. of course her family's gumbo looks like spaghetti sauce mixed with shrimp stew.

A-bears food is great, but yea the old women who work there act like they lost a bet.

I like some crunch in the PS, though from onions and celery.

that's for damn sure. Good plate lunches there.

If I happen to be in Houma for lunch I also like Big Mike's right down the street as well, and they have a surprisingly good Thai restaurant over by the car dealerships. And the half oyster / half shrimp poboy @ French Loaf..

My folks lived in South La for a bit and picked up the potato salad habit, so I've had it all my life. Virtually no one else up here does it.

Hell, I plopped some potato salad in my red beans and rice two minutes before I saw this thread. That and some hot crackers is good eating.

Heberts has AYCE catfish on Friday night with a little chinky-chank Cajun band. Good times, we go about once a year.

I wonder if macaroni salad would be good in gumbo? It's my preference over potato salad in general... I'll try it out when I have a first go at makin gumbo
