Ideas for leftover pork from a couchon de lait

I have 2 quart ziplocs packed full of pulled wild pork. Let's hear your ideas! I want to do something different than quesadillas or jambalaya.

Finely mince some onion, bell pepper and some garlic and sautee that in a bit of olive oil or bacon grease until translucent, add the pulled pork to warm it and blend it with the seasonings.
Pour some BBQ sauce over it and heat that up and use it like Sloppy Joe's on burger buns or better yet, onion buns from the store bakery.
I have used pulled pork in omelets with thinly sliced onion and bell pepper cooked a bit to soften it, add the pulled pork to heat, and in a separate pan start your eggs for the omelet and add the pulled pork mixture to the eggs. Toss in some cheese if you feel real hungry before folding over the eggs to complete the omelet.

Prep your vegs like gumbo said above add pork and warm. Place on large tortilla add cheese. Roll for a badass burrito

Another great use for the pork. I love a good Cubano and miss Garces that use to be on Williams Blvd. in Kenner.
The first Garces I ever ate at was a little hole in the wall in Mid-City on one of the back streets off the main drags. It was either on a corner on Baudin or DeHemacourt that runs parallel with Banks St.
