It goes back to the ultimate FDB boom. Why are you eating canned chicken when you can "source" a local chicken, roast it over some locally sourced wood, and season with some herbs in your yard.
Get a jar of capers and be done with it. Some folks want to pretend that they cook everything. I can promise you I have eaten out less than anyone that that visits this place. The idea that canned chicken or tuna is off limits is just crazy. Sometimes you have to eat. Period.
And frozen spinach might be 1000 times more economical that fresh. But I eat spinach 3-4 times a week.

Canned chicken and tuna are emergency staples on Keto. There are too many good things to eat. Tonight is Italian sausage and peppers. But these people pretending they never eat outside their diets kill me. That is why I have canned chicken and tuna in the fridge at work. So I don't say "Guess I'l get a couple quarter pounders since I don't have anything to eat!"
So mayo and capers help feed the beast. But I know I should be going out for "nice" meals three times a day.

Yeah, a can of chicken in a large salad is a quick fairly healthy lunch. Sure a fresh chicken breast you cook yourself is healthier but you act like eating canned chicken is the equivalent of eating a value meal from Mcdonalds.

Chicken green (Thai) curry.
Super easy, cheap ($1/serving), quick (15-20 mins), relatively healthy.
Green curry paste, a can of coconut milk, a bag or 2 of whatever frozen veggies you prefer (I do one of onions/peppers and one of Asian mix), a 12.5oz can of chicken, a dash of fish sauce, a bit of flour or cornstarch to thicken it up.
Mix it around a bit, simmer until desired veggie tenderness, and serve over rice.

Never have tried cooking it any kind of sauce. Made burritos a few times and it wasn't bad.
