I want to make an eggplant dish, any good was to cook besides fry?

I have some left over boiled crawfish tails and I was thinking about cooking them with Trinity and garlic with butter and then making something like an alfredo with Perperconio Romana Cheese.
Then some cream.

With this already fattening sauce, I didn't want to fry the eggplant I plan to top with the sauce.

Should I bread and bake?
Grill?
Bake?

I may make a pasta as well in case the eggplant doesn't come out right.

You could brush the eggplant with olive oil, add s & p and either grill or roast them in the oven.

You could also cook the innards and stuff them with the crawfish tails. I love seafood stuffed eggplant.

Make Caponata.

Many people have never tried it, but it is fantastic and easy to make.

Make a cassarole.Peel em and boil em.Saute the trinity in a bit of olive oil, add the crawfish tails and mashed eggplant, season to taste, add a beaten egg or two,pop in a baking dish,top with bread crumbs and bake until set.

There is a pretty good recipe on the TD recipe book (see stickied thread above) for crawfish and eggplant casserole that I actually made on Tuesday. I enjoyed it and it was pretty easy to make.

You can cook it like smothered okra or that casserole sounds good.

Search on FoodNetwork.com and look for a recipe that Alton Brown did on eggplant. I tried it a few months back and it was great. You basically slice and salt the eggplant and set it aside for awhile so the salt can remove most of the water. Then you cut it into thin slices and it has a consistency similar to pasta (since most of the water is gone). The recipe then has a sauce to go on top of it. I loved it because one thing I don't like about eggplant is the mushiness of it when you cook it.

+1 on seafood stuffed eggplant. I made this a long time ago, but it was extremely tasty!

I make eggplant pirogues often once they are ready in my garden. This is how I make mine.

Start with 4 large eggplants
1 lb. of peeled shrimp
3/4 lb. lump crab meat
1 bunch green onions
1 large yellow onion
1 green bell pepper
1 red bell pepper
1/2 cup heavy whipping cream
2 teaspoons garlic
cajun seasoning
bread crumbs
graded parmesian cheese(optional)
2 eggs
milk


Peel the eggplants then cut into halves(8 halves)

use a spoon and scoop out center of eggplant halves leaving about 1/3 inch of eggplant

next mix milk and egg mixture and dip eggplant into this then roll in bread crumbs covering the entire eggplant. Deep fry at 350 until golden brown. Drain on towel and set aside.

Next melt a teaspoon of butter in a skillet and add diced yellow onion, green and red bellpepper, garlic and green onions. Sautee of medium heat for approx 5 minutes. Next add shrimp and sautee for 2 minutes. Next add crab meat and sautee for 2 minutes. Next add whipping cream and reduce down to a thick texture and season to taste. Next scoop this mixture in the hollowed out eggplant halves. On top of this sprinkle a little bread crumb and graded parmesian then put into broiler for 3 mintes.

This, add Shrimp and bread crumbs at the end. Bake for about 30 on 400 degrees!
