For the "But why" folks, it was because I asked the SO what she wanted me to cook, and jokingly, she said, hamburger helper. I accepted the challenge. I decided on a chili mac stile and headed to Kroger.
I bought or used:
1lb ground chuck
1 onion chopped
1 can diced tomatoes
1 can green chilis
1 pack taco seasoning
1/2 can tomato paste
wine/beef stock
half and half
mini penne
Browned the meat, then removed. Cooked down the onion a bit then toasted the paste. Deglazed with red wine then added the tomatoes and chilis. Let that simmer to break down the tomatoes. As it reduced, I added beef stock. After that simmered some, I added half and half to pink it up a bit.
Boiled the pasta and saved a cup of pasta water. I added 4 cheese Mexican bland then pasta water-rinse repeat. Dumped the pasta.
It was fantastic

Try a little cream cheese in there. I've done the same except used cream cheese and did not use tomato paste.

After binging through the Sopranos a few months back, I attempted a baked ziti recipe and it was basically fancy hamburger helper.

I don't know why they call this stuff hamburger helper. It does just fine by itself.
