I just witnessed some of the worst cooking instructions on TV

Paula Deans son on how to make Gumbo. No roux, didn't saute the trinity (using Vidalia onions) in any way at all, brown rice thrown into the pot then adds chicken stock and put a lid on the pot as it simply needed to cook until the rice was done. I would barely call that shite soup much less gumbo.

I feel your pain.

A friend of mine went to get some "Cajun" food here in KC (yeah, big mistake). He ordered a muffaletta. Little waitress comes out with a......hotdog with olive salad!

Him: That's not a muffaletta.
Her: Yeah, it's a muffaletta.
Him: I'm from New Orleans and that's not a muffaletta
Her: Yeah it is.

She kept arguing with him so he calls the manager/owner and ask him if he had ever even been to NO, which of course he hadn't.

So you see, this is a MUCH bigger problem than one pot of gumfaux on a cooking show.

I ordered gumbo in Florida one time and got tomato gravy.

Although, I do come from an area of Louisiana that made a roux-less gumbo. The darkness came from browning the onions just short of burning. It was a crude method, but when you're truly hungry, it counted as a gumbo.

I always imagined this recipe had developed because it was from a very marshy/humid area, and I imagine flour was both hard to get and keep.

Paula Deen can't cook the shite she knows something about, how could she, or her pillow biting sons, cook something as foreign as gumbo. She is a hero to the roll tide crowd, enough said.

Never order a 'Cajun', 'Creole', or 'New Orleans style' dish away from south Louisiana.

Business trip in Lexington, Ky. My associate ordered 'gumbo.' I warned him not to. It was white...kind of like clam chowder. He couldn't eat it.

Was it Bourbon N' Toulouse or Gumbo Ya Ya's? I've had both and thought they were both really good, of course I've lived in Kentucky my entire life too and think Zataran's Jambalaya is good.

Son, you need to visit more often and let the collective minds give you cooking lessons, the root of them doesn't matter, we have it covered on origin of the dish. The F&D board should be considered a nationl treasure.

Food network is a joke. There used to be some legit shows on there, but now it has been dumbed down for the sheeple to the point where it's unwatchable. Best cooking on TV LPB create channel. Cox chan 123.
