I’m doing them for 24hrs at 150. Only because the vid I saw that’s what they did. This is only my second SV cook (thanks for lending it to my uncle jack) so I don’t know what the norm is for ribs. Yes frying them for the crust and just to do something different.

3 slabs not too bad. I had to cut them in half like I had a BGE (team Primo ). I have some test subjects coming by to try them.

If I get lower quality beef, I also like to over cook it a little more and eat with A1. Cooking select grade at Medium Rare is just too chewy. Prime and choice are medium rare all day.
