This would work.

Toast the bread inside and out. I wouldn't use potato salad though. Use something like a slaw... Blue cheese slaw sounds good to me

I don't like heavy mustard in potato salad or in my gumbo. Too much mustard would ruin the gumbo for me. And, I definitely wouldn't want gumbo, bread and potato salad on a sandwich, but that's all a matter of taste. Some people might enjoy it. Sounds just awful to me.

Maybe a slightly different version of coleslaw... try poppyseed dressing instead of mayonnaise.

Frankie's Dawg House in BR has something like this if you want to try it before serving it. They do some kind of sausage dressed with grilled onions and potato salad, then they give you a cup of gumbo to dip it in, tried it a couple weeks ago and it was pretty good I thought.

I think I would do the following:

Good bread
Pulled chicken in a nice brown gravy
Crisped smoked sausage or bacon...not in the gravy
Fried okra
then something cool and crispy, a good slaw, or just some iceberg, dress with some mayo and maybe slices of boiled egg to add the potato salad type component. No mustard unless a dab of whole grain.

Season with salt, pepper, and a little garlic powder.

its all execution , I cant imagine a better party dish than a great pot of gumbo and disposable plates and bowls! But I am not real refined.

do you think same way about RB poboy and good roast with rice and gravy you could be having?

I love the mecca, but I left in 1994...and at that time, I never had consumed a dish that even resembled gumbo , I had eaten gumbo a good bit though.
