I don't like heavy mustard in potato salad or in my gumbo. Too much mustard would ruin the gumbo for me. And, I definitely wouldn't want gumbo, bread and potato salad on a sandwich, but that's all a matter of taste. Some people might enjoy it. Sounds just awful to me.

Maybe a slightly different version of coleslaw... try poppyseed dressing instead of mayonnaise.

Frankie's Dawg House in BR has something like this if you want to try it before serving it. They do some kind of sausage dressed with grilled onions and potato salad, then they give you a cup of gumbo to dip it in, tried it a couple weeks ago and it was pretty good I thought.

Might have better luck with a jambalaya sandwich.

Pastalaya in a bread bowl did not work for me last season

Which will make the chicken into debris after deboning it and putting it back into the pot.

I think I would do the following:
Good bread
Pulled chicken in a nice brown gravy
Crisped smoked sausage or bacon...not in the gravy
Fried okra
then something cool and crispy, a good slaw, or just some iceberg, dress with some mayo and maybe slices of boiled egg to add the potato salad type component. No mustard unless a dab of whole grain.
Season with salt, pepper, and a little garlic powder.

I feel like I saw a cooking show in which someone tried something like this and got kicked off.

Too saucy? It sounds good, though.

a great pot of gumbo
Love this, but gumbo poboys would depress me. I would be thinking about the great bowl of gumbo I could be having.

What is fundamental difference between two thoughts?

Well, you certainly can't blame that on your roots. You are at an extreme advantage by growing up and eating Meccas Delicacies..

I love the mecca, but I left in 1994...and at that time, I never had consumed a dish that even resembled gumbo
If Paul Allen says a word, I swear to God.
