Gumbo is gumbo. It's meant to be served in a bowl over rice or potato salad, if that's your pleasure. It's not meant to be a salad, sushi or a sandwich. Why can't people just serve it like it's supposed to be served. Next thing we'll here about is fried gumbo balls, gumbo curry, gumbo burgers, roasted gumbo, pan sauteed gumbo, gumbo with tomatoes and okra.......sheesh!

For the draft, I prefer to prepare finger foods, but had a hankering for some gumbo. Walking around with a bowl isn't conducive to going double fisted on spirits.

It was just bite-size gumbo, really.

Paper, rice, center was a thick roux gumbo.

Have you made the shrimp and andouille muffins? Quite a few folks here have made those and reported having great success with them. I've made them a bunch and people really like them.

Forget all the naysayers in this thread. Sometimes when I make a gumbo I end up with a bunch of leftover chicken and andouille because some people take all soup and no meat. I butter up some French bread, toast it, and eat all that stuff on a poboy.
