If you go to a local (La.) lenten fish fry chances are you are getting swai/basa. It tastes and cooks up fine, but it's not catfish. It really doesn't bother me. Many of those eating use it as a vehicle for ketchup, tartar sauce, or cocktail sauce anyway so there's that.
What I do like about swai was the uniform portion sizes. If you ordered a box of 7-9oz filets, there was little variation.

I didn't mean to get into an ichtyological discussion on the differences, only that it's not catfish but since you asked..

The older I get, the less I eat mac and cheese for whatever reason. But my MawMaw always made it with spaghetti instead of elbow macaroni, so I prefer the spaghetti anyway…

Even montalbano's is serving this crap. It is disgusting. Surprisingly the farm raised MS catfish individually frozen is not bad, but I still prefer specs I catch myself.

Crawford's on Staring has some pretty tasty C-fish. May be Swai or Basa I guess but it is very mild tasting and everyone I know that eats it thinks its delicious.
