how to make good chicken broth for a soup?

i despise chicago and its shite weather. it's cold as frick here. horrible city. so i need to make soup.

i have a whole chicken i'm going to cook in the slow cooker. I will then have the juices and the bones left over. I've made broth this way before -- just adding water to the bones/juices, carrots and salt.

but what do i do with the broth after that? do i cool if fast and skim all the hardened fat on the top? or do i leave all the fat? leave half?

i'm not the smartest.

Cool it and skim it. Roast the bones before you make the stock, too.

After you cook the chicken in the slow cooker, debone and assemble on a roasting pan. Roast said bones with a quartered onion (skin on) some celery, garlic and a bunch of thyme. Roast in a hot oven until the bones and vegetables are browned nicely.

Put contents of roasting pan into a large stock pot and add water to a volume of stock you want and a little more. Deglaze the roasting pan on the stove with a cup or two of a decent dry white wine. Add this to the pot with a tablespoon of whole peppercorns, two bay leaves, a little kosher salt and a tablespoon of tomato paste. Simmer for about 3 hours and strain through a fine mesh.

Quick cool in an ice bath and put into refrigerator. Next day, remove 2/3rds of fat cap and use this to make your chicken soup (google and find a recipe you like).

It's not that cold here, but I am on the second day of making a chicken soup that will blow the doors off of anything you could buy.

and you're morbidly obese, slothful, prideful, and suffer from angry outbursts

i'd rather not be the smartest than suffer from any of those four fundamental character flaws.

Pressure cooker makes great stock in 45 mins - 1 hr.

Buy chicken backs and feet for your stock. Roast them a bit then put in a stock pot with a little carrot, garlic, onion, cracked peppercorns, salt, some bay leaf and water. Put in oven on 200 not covered for 10-12 hours. Take out and cool. Put in fridge over night. Skim fat off the top the next day. Will be like jello.

When I purchase chicken wings for the grill, I cut off the wing tips and save these for stock. (Sorry Gris Gris). A couple of dollars worth of onion, carrot, celery, herbs, garlic and ginger emanates one of the best smells a kitchen could have, and priceless stock to boot.
