I only make 2 kinds. One just sliced real thin and only oil, vinegar, salt and pepper. The other is how my wife likes it and it's diced small, add shredded carrots, mayo, lemon juice for a bit of tartness, salt, pepper and a bit of Dijon. If we have raisins, I'll put some of them in it for her, but it is not a deal killer if we have none.

We made 6 types of slaw prepping for Hogs this year. Favorites were blue cheese, horseradish, and Asian.

In Arkansas catfish restaurants there's often a sweet and sour slaw that may include some Vidalia Onions.

Sweet slaw in east Tennessee is cream and sugar with a hint of salad dressing.

Eastern North Carolina also has a BBQ slaw that sometimes is called a red slaw that is different from western NC.

And those are just the cabbage based slaws.

I put this on the other cole slaw thread as well.

There was a small restaurant chain years ago called "cock of the walk". Some of you will know it. It was a catfish joint that served, what i thought was the best cole slaw around.

Here's a knock off of the recipe for those who know the restaurant and want to duplicate the slaw.

One 14oz bag of slaw mix with or without carrots

1/4 cup green onion chopped

1/4 cup chopped sweet onion

1/4 bell pepper chopped

1/8 cup of sugar

1/2 tblsp black pepper

1/2 tblsp garlic powder

1/2 tblsp seasoned salt (whatever flavor. I used zatarains)

1/2 tblsp white vinegar

1/2 cup mayo
