350 degrees, 3 to 3.5 minutes per pound. I buy 14 lb turkeys and go 45 minutes.

Insert a thermometer in thigh. Looking for 160-165 degrees. Will continue to cook while resting.

Cook to internal temperature, not time.

When I used to fry I used to do 3 minutes per pound then 5 minutes at the end. I would also do a temp check after the 3 minutes per pound timer was done.

I have always wanted to (prior to cooking) weigh my turkey after taking all the extras out to see the true weight.

Been frying mine at 325 for 3.5 minutes a lb.

I like to fry 13 lb. turkeys and that works out to 45 minutes in the oil. I get the oil up to 350 before slowly lowering the turkey in the pot and that will drop the temperature to just under 325 in my pot then I get it back up to 325 and monitor it regularly because it will fluctuate as it cooks and you may need to increase the flame or lower.

After it is done I'll let the oil drain off and tent it under aluminum foil while I get another bird in the oil.

I like to let the bird rest for no less than 15 minutes before starting to cut into it as this gives the juices time to redistribute in the turkey for a very moist bird.

If you want the perfect turkey, get an internal thermometer for the turkey when frying. There are so many variables when frying a big item. For exapmle, your oil temp will flucuate a little, especially when you drop the big cold bird into the hot grease. Temp will drop semi-drastically and take 5-10 min to catch up. Just buy a thermometer, itll make tomorrow less stressful for you I promise.

Gotcha. Got excited for a second at the thought of buying another gadget.

You won't get a good thermometer for $10. If you want a good thermometer I recommend anything Thermoworks sells. ThermoWorks

Yeah, those are good. Have a thermapen.

I misunderstood his post. I thought he was saying there is a probe that you can leave in the turkey while frying. I would want one of those if they made them.

Random thing to add. Someone at work told me
If you put a whole onion in the fryer, your turkey won’t burn.

I have no idea how or why. Also, I have never fried a turkey, just curious if anyone has ever heard this trick/ nonsense?

My uncle does everyone’s turkeys in our family and does the time method for a rough estimate of overall time. He typically uses his oil thermometer to see when turkey is done. The oil temp will drop when you put the turkey in and then stall out for a while. Once it begins to rise above stall temp it’s ready to pull the turkey out. I have never done it myself but this was his explanation when I asked about it.

Remember to allow for the volume of oil the turkey will displace so you don't burn your house down.
