I do some of each (full moon, half moon and quartered) in every gumbo...Not sure why, it's just something I've always done.

I'd lie if I said anything other than, "However the hell I feel on the spur of the moment". Sometimes, I'll cut inch long chunks, and sometimes I want little tiny pieces.

It just depends on what my stomach and mouth agree is the best smoked pig delivery format at that instant.

normally a combo of halved and quartered. i like the variety and to have more than just sausage on each bite.
