I mean if we are talking ham/cold cut:
Bread
Mayo
Meat
Cheese
Mustard (optional)
Tomatoes, pickles, jalapeños & onions (Last 3 depending on the meat but always tomatoes)
Lettuce
Salt & Pepper
Little oil & vinegar
Italian seasoning
Mayo
Bread

Bread, mayo, salt & pepper, piece of bologna, few pieces of Cajun turkey, 2nd piece of bologna, then top with a 2nd piece of bread with mayo, salt & pepper, and cheese.

Something I have been doing to sandwiches is also adding a little BBQ sauce along with the mayo.

I also usually sprinkle on some Tony's and garlic powder.

The price of most supper market deli meat has almost doubled in the last couple of years. But you can still buy a loaf of fresh French bread and deli meat for about $10-12 and make 3 or 4 po-boys.

Cold side cold. Hot side hot. Cheese never touches condiments.
