I always cook my bacon in a cast iron skillet because I always cook eggs in the fat afterwards. And who likes limp bacon?

My wife uses the oven method.

I can't really taste the difference, but there is just something about cooking bacon on my grandma's cast iron skillet that just feels right.

I have my wife stretch it out in one of those plastic racks and microwave the piss out of it.

No joke, it turns out great every time.

I buy house made bacon from the provisions store butcher down the street. If I'm buying from a grocery store I either buy Fresh Market's house bacon they have in the case, or a package of Hormel center cut if I'm in a pinch and buying from somewhere like Kroger.

Looks like I shite the bed here by claiming that it stinks when cooked. A little bit when you're rendering fat...great. Cooking a whole pound of the stuff...I'd rather do it outside.

try to find some nitrate free bacon if you're buying packaged. Tastes so much better. I don't know how people eat that other stuff.

Put the trips in a cold cast iron, turn the heat up to 3/10, and let it cook for about 15 minutes on each side while I get ready in the morning.

Keeps the bacon from curling up, cooks it crispy as hell, and renders all the fat to the perfect cooking temperature for my eggs.

I read it somewhere on a website years ago and I've done it ever since.

We microwave it on a plate that has ridges that makes for easy pouring of the bacon grease into a ramekin that I keep beside the stove for adding to, well, just about everything. We bought a 10-lb package from Sam's for $19.99 awhile ago, and while the bacon tasted fine, the rendered fat never solidified in my ramekins. Not sure what chemicals cause that but I haven't bought the stuff since.

They make this stuff just down the road from us and it is the best bacon you can buy around here:

Oven is money. It can't fail. If I'm just buying brand name, store bought bacon I generally go with Wright Applewood. I prefer a thick slice and that one is solid.

The thick bacon is 10x easier to handle. The thin stuff twists around, stretches, and is harder to peel apart. Not to ention that you can get a crispy outside and chewy inside.

I can understand that when cooking a lot just to save on that much splatter regardless of where you're cooking it inside.

When you fry bacon on a stove top, the smell stays in your kitchen all day. And not the full-bodied wonderful smell of bacon, just the fried, less-savory notes.

That's how I always cook it. My wife will cook 2-3 strips in a pan, and then cook her eggs in the grease. But when we're all having breakfast on the weekends, I cook about 8 slices in the oven. Foil lined pan, set it to 425 and turn it on. Takes anywhere from 15-20 minutes depending on thickness of the bacon. Gives me time to make a pot of coffee, sit out a few eggs, grate some cheese, and maybe mix up some pancakes for the wife to cook. Spoon out a few tablespoons of the hot grease in the pan to cook the eggs in.

This. I don't like the lingering smell. The cooking smell is great. A strong pot of coffee and bacon frying is like how I imagine Heaven smells like. But your nose gets used to it. You'll be sitting around relaxing after gorging on breakfast, and walk outside to do something. Come back in and it is like walking into a dank Waffle House. And this could be 3, 6, 10 hours later.

By then, I've probably cooked something else and developed new smells in the kitchen.

I also have a really strong vent since I have a gas grill in the stovetop.
