Herb's, Lexington Barbecue(Honey Monk), the Barbecue Center, Richard's, Red Bridges, Switzerland Cafe, Skylight, amongst others.
I will say, Haywood Smokehouse in Dillsboro is excellent and the best I had in NC. It's brisket is even on par with a great Texas bbq restaurant.
I’m surprised Skylight is on your list given their reputation and they do use wood - I’ve only eaten there once.
FWIW, I ate at Switzerland Cafe last week but didn’t have bbq.
Regarding the hot take about local cuisine: Downeast in NC a town of 15 to 25k folks might have 3 bbq places and the locals will have the one they like the best that they always go to. Even though Easter NC BBQ is a type there are more than subtle difference between places.

Regardless, I've been visiting NC once per year for the last three and will probably return this Fall. I'll keep trying a multitude of BBQ places because I enjoy the idea of NC bbq and might find that special place.
