Here's my long aged sour projects. Just ordered some French oak spirals that I'll be boiling and smoking in white wine before I add it to the fermenter in the back. 10 months in the fermenter so far. After sitting on oak for a couple weeks I'll finally bottle with some brett.
I took minimizing carboy space to an extreme with the 2 - 3 gallon batches.

I did not have good luck with a Fantome culture I built up and used in a beer. The Fantome was the basic saison with no hints of band-aid or skunk. Really the perfect Fantome. The starter tasted fantastic, but it quickly soured 5 gallons to the point it was enamel-eating. It also had these weird growths I have never seen before. Looked like little mushrooms. I used 10% in a blend to add some acidity and dumped the rest.

I have an old one. The gages don't work, but it regulates the air. Just have to go by feel.

Just oaked my long aged sour. A few more weeks and this will be bottled. Boiled the stock for 10 minutes then soaked it another 30.

Just bottled 20 beers with the beer gun. Seemed to go off without a hitch. How have everyone's turned out? Good carbonation? Shelf life?

I kegged a galaxy ipa this weekend, and Monday I poured the first glass. Tasted bad, maybe infected? But I had not noticed anything off from the previous sample and nothing smelled off when I kegged it, but I didn't sample it at kegging, so who knows?
Anyways, When I went back to pour a little more to study it, I noticed how nasty my faucet looked. I got home yesterday and pulled the faucet, tore it apart and cleaned it, put it all back on, and problem solved.
Decided I should probably go ahead and clean the other ones too, while I was enjoying a now tasty Galaxy NEIPA.

Planning a NE IPA finally. I have the water profile i want to try out, and the yeast and grain bill, however, i'm unsure of the hop bill. I brewed this beer before i started kegging, last year. The beer was fantastic but lost the hop juice i was looking for. The beer was originally planned to mimic one of the past batches of ghost where i caught a mixture of citrus and dankness to the batch.
The original hop bill last year was as follows:

This year i was thinking of adding galaxy hops to the hop bill simply because i have them. However, i'm wondering if i may muddle up the hops too much with the galaxy, and if i should just remove it all together and up my other hop qty's. Thoughts?

Looks to be a good combo but like you said, people say galaxy can do that. I am new to magnum. Is that a good bittering hop?

It's clean, high alpha acid, and i have some in the freezer. Bittering hops, you're really just looking for alpha acids if you want to reduce the amount of hops you are buying and hop trub.

It's a super durable hop too... Loses next to nothing in alpha acid when stored for a few months at room temps.
Not that you should ever keeps your hops at room temps for extended times. ;)
