3/4 garbage, 1/4 liquid gold. It's called trub, and it consists of hop particles, yeast, proteins, and whatever else.

Google "yeast washing" and there should be some good advice. In short, poor in distilled water and shake, wait 20 min and the slowly poor off top portion, let that sit for 20 min, poor off top portion and leave slurry behind. Place the liquid you just poured off into a sterile jar for storage.
You can do this for several generations before you run the risk of mutations significantly altering your yeast strain. You can also "top harvest" and your yeast will remain viable much longer, possibly even for years.

Thanks. I racked it to another fermenter and added the pompegranat. I know I had everything nice and sanitized, but I'm a nervous wreck.

Update on my mash efficiency debacle.
I was playing around on beersmith last night, and my equipment profiles are not setup correctly. I believe for this last batch i was using a different profile than ones i've been using before (i've been using the beersmith presets). If i would have used the profile i've used in the past, then i would have had to collected more wort pre-boil, which would have lowered my mash pre-boil SG. I collected 7.3 gallons of wort. The other profile called for around 8 gallons.
So, in response, i created my own equipment profile (1 for 60 minute boil, 1 for 90 minute) with some detailed measurements and hopefully, i can work from there. I'm basically, redialing in my equipment, at a custom level.

Hey LSURoss, be honest, when you pitched that yeast the first time, how often and how many times did you go peek at the air lock to see if it was bubbling yet?

4 hours. And yes it was already bubbling. I wanted to sit in the closet with it, but I couldn't fit.

I used to video it. I still check on my fermenters everyday usually.
