this. You can use priming sugar in the keg, but you have to keep pressure to push beer out

I'm hoping that using a sterile siphon starter and racking into the keg through the liquid side poppet will help out with that a lot

This is what I started with...

It works great. You just have to be careful about the pressure if you are using better bottles. FYI they start to complain about 3 PSI.

My setup was very similar to this one.

Absolutely...

You can use something like this... You just blow on the sterile filter and start the siphon and walk away.

it's not 'oxygen free', but it works great and you're transferring into a sealed CO2 purged keg. You would think the o2 pickup would be minimal.

Brewed an IPA/DIPA for Brew at the Zoo today.

Ended up missing my gravity by three points, but got almost 6.5 gallons in the conical instead of 6. I'll call it a wash.

12.5 ounces of pellet hops in the kettle makes for one hell of hop sludge.

Another sour question.

I've read and heard that bitter and sour do not mix, meaning hops is not preferred when souring a beer. However, i have read that Brett Brux is a nice additive when dry hopping in a secondary (maybe i read that wrong?).

So seeing as Brett brux is in the sour beer category but not technically sour, is dry hopping acceptable in a brett brux only beer? If so, what amounts? Do i dry hop like i would an IPA or more restrained like in a pale ale?

I recently had Hill Farmstead Dorothy and would really like to replicate that the best i could.

Hops =/= bitterness in all cases, and you know this. Dry hopping doesn't add bitterness. Brett can cause bitterness to be more apparent as it dries the beer out, but late addition/dry hops and brett go great.

Sorry, you're right. What is the IBU tolerance for Brett? Or is it like sach brews and is up to the brewer.

Yeah, I've always gone with late hop additions in my Brett brews. However, MF brewed a nearly 100 IBU Brett beer and raved about it on his blog.

Had a smoked sour homebrew beer (not mine) tonight that was pure Band Aid. Then had a blonde with Brett and pale ale with Brett that were both very good.

Not that I'm ever going to do it, but what causes the Band Aid characteristics?

I find that some smoked beers have a little bandaid/plastic flavor on their own. I can see that getting out of hand when mixed with brett.

Culprit on the bandaid flavor in Brett beers is typically 4-vinylphenol.

You may be really sensitive to that phenol since you seem to pick it up pretty often. It's not uncommon in mixed sac/brett fermentations, but it's often much lower in 100% Brett beers and I believe you've said you get it quite often in those too.

That's all i needed to know, thanks.

I bottled my oktoberfest last Monday, so hopefully it is ready come judging time. Need to find a good box to ship them in.

Pitched a 1.099 RIS onto a slurry of 1272 on Saturday and its down to 1.026 already.

Going to pop my 10g cherry as well here pretty soon the too.
Just picked up 23.5 lbs of grain and 2 smack packs.
Should be fun.
