wasn't planning on it

Batch sparging? If so that shouldn't be a issue. I add that second batch at around 188F to get the grains up to 170. Hotter rinse helps get those sugars out.

yes, batch sparging. I don't remember what the sparge water was at, probably 168 or so. I'm guessing you haven't had an issues with extracting tannins with a hotter sparge, so I might try it a little hotter than 168 today and see how it goes

speaking of that BW, it's just now clearing up a good bit. If the carbonation is good, the bottles I filled should be pretty good beer.

You'd be surprised at how hot you need to put that water in there to bump up the grain bed any significant amount. You're shooting for the grain bed to be in the 168 range.

that is interesting. I wonder why beersmith recommends using 168 degree water then?

I don't know. I changed my default to 188.

Copying B with some homegrown hops. These still need some time on the vine but I've got some handfuls to throw into this Pliny clone I'm making.

ended up with 8 gallons of wort at 1.045. Was designed for 8 gallons at 1.040.

There you go. I like that thermometer.

About to put the DIPA in the Carboy and call it a brew day.

A 2L starter gets your fermentation off and running quickly.
Pitched the yeast around 3:30, and came back home from dinner and a movie to a steady flow of CO2 out of the blowoff tube, just 7 hours later

Can't say the same about using dry yeast. No activity here.

Waiting for fermentation to start makes me nervous.

But seeing this makes me happy

Checked it first thing this morning and it's rocking. Just took a little longer with Dry yeast. Hopefully flavor is not affected.

Since it plugged away all night I went ahead and moved it upstairs so it will slowly rise to 80 or so as the room heats today

Been Researching......

I am going to pull off 2.5 gallons of this IPA wort, before boiling and hop additions, to try a sour. I have dregs from a JK Atrial Rubicite and an Avery Brett. Do I need to make a starter or just dump the dregs? I am going to make a saccro starter from the dregs of some westmalle clone.
