I need to step my spontaneous fermentation batch up from 1 to 2 gallons. The brew store is holding a 15 gallon fermentor for me and I'll use those two gallons as a starter for this new barrel.

I'm going to start a 3rd barrel and use a 50/50 blend of spontaneous starter & and bugs from my first lambic barrel. Then in a year or two I'll have 3 barrels to blend from.

Did you get your copy of American Sour Beers? Mine came in the other day. I've only had time to get a couple chapters in, but so far so good.

I ordered mine but it hasn't come in yet.

On a side note, does anyone have the Big Mouth Bubbler fermentors? I am going to replace my plastic carboys as they are getting scratched up and was going to try the new ones out. Unfortunately LAHomebrew cannot get a hold of them so I will have to get them from Midwest or Northern.

posting this again because it got a page bottom and no response so far


Here is what I plan to roll with, how's it look?

11.5 lb Pilsner
1.5 lb Vienna
1 lb Rye
.5 lb Acid
.5 lb Caramunich

Mash 75 minutes
Boil 60

use Amarillo hops @ 60, 20, and 5 for 28 IBUs

use WLP568 Belgian style saison yeast - will be fermenting around 75 degrees, but I can put it where it will stay 80-85 if needed

dry hop with an ounce of citra

Est Original Gravity: 1.056 SG
Est Final Gravity: 1.010 SG
Estimated Alcohol by Vol: 6.0 %
Bitterness: 28.2 IBUs
Est Color: 6.7 SRM

I do. I won't be getting another one, at least the glass one. It's very thin and they've had some QC problems with air bubbles in the glass that like to cause severed tendons when people add warm water to clean them out. If you get one, take my dad's advice and always treat glass like it's as fragile as glass.

Looks good to me. Don't take that yeast over mid 70s unless it stalls, which it isn't known for unlike some other saison strains.

Just curious what the advantage these would be over plastic buckets? Aside from the fact that they are clear and you can see fermentation. I've used buckets exclusively, and am very happy with them (and the ease of dry hopping/adding fruit) and how easy they are to clean, so I'm wondering if I'm missing out.

I don't think I will buy anything other than buckets now, for the simple fact they are stackable and take up less room

I was going to ask the same thing even though I actually like the way the plastic BMB look.
I still use my better bottles predominantly. I like my sterile siphon starter for transferring.

The plastic buckets are made (HDPE) of tends to be more oxygen permeable than the PET plastic better bottles and bubblers are made of.

For 99.9% of beers I highly doubt it would make a difference, but I probably wouldn't age a sour for a year in a bucket unless I didn't mind some O2/acetobacter pick up over time.

My main issue with buckets are the lids. I have a few buckets and they are a pain in the arse to get off. I take a good number of samples throughout the process and my bucket holes aren't big enough to fit my thief through. Maybe I just need to find buckets with bigger bung holes.

I thought about trying one of those gamma seal lids on a fermentation bucket, but have never picked one up.

I've got some from NB that are big enough for auto siphons to fit though.
