I got lazy and just stole the second batch of sour mashed saison from Brandon, added local peach puree and called it a day. Haven't been able to brew recently so I had no other options. Going to ditch the saison name and probably call it a Berliner Weisse even though the grain bill is more saison.

I've been thinking, and that's never good. I am thinking of how I can possibly get even lazier in brewing. Normally I drain my kettle into my no-chill cube, and then transfer to a fermenter once it's chilled the next day or two. I'm wondering if I just turn off the heat, drain off enough for a starter, place the lid back on, and let it chill overnight in the kettle. I know people do that, but what if I also fermented in the kettle? I'd only think of doing it with a low gravity saison as it'd be fermenting outside in the summer. Pitch the yeast, let it burp the lid as needed, then drain off into a keg after a week to crash cool and carb.
I think I'm going to try it. I have nothing to lose other than a few hours and $20.

I do something similar with all my brews. Boil, remove starter volume, let sit open until about 165-170 then cover for the night. I usually transfer to an open fermentor to get my O2 levels right. Open ferment for 3 to 7 days and then gravity transfer to long term storage.

I missed my gravity and volume somehow, but I'm not terribly disappointed. I suppose I could boil it down until I get to my target OG, but I'm fine with it being a little low.
Can't figure how I'm low on the gravity and low on the volume though

This beer doesn't have a chance. I left the kettle in the garage so it would stay nice and hot for a couple days for the lacto to do work

Oh, I couldn't help but pry up the top a hair and take a whiff. Smells of creamed corn. I immediately went to the googles to see if that's good or bad. Best I can tell, it's good, or at least not bad

Ha ha! Those things suck. I remember this winter getting up at 3:00 am to to go turn the freaking heating pad back on but there weren't a lot of choices with the ridiculous winter we had.

While I never turn down beers, why do you owe me some?
And speaking of WYES, our Friday night beer is great but will not be as exciting as we had hoped. We cannot find any live borage (edible plant). We found one plant but it died once we brought it home. So our beer will not be exactly what we listed on the menu. Oh well.
