You use less sugar in a keg. If memory serves me right, it's about 1/3 the amount, but research that as it's been a while since I've naturally carbed a non-brett beer in a keg. Purge with CO2 and seat the lid, then you can unhook the CO2 and let it carb up with the sugar. If you try and force carb with CO2 at room temp, it takes a good while.

I also agree with this, 2 weeks is a long time to go with it, though I have heard of people going longer. At the very least I would rack it, or if you used a hop sack, pull the hops out. If you are going to rack it, may as well go into the keg with it

I've dry hopped for as long as 21 days and as short as 4 days. I can't really compare the two extremes due to the wildly different hop amounts but I was pleased with the results each time.

I've been trying to brew a Brett strawberry wheat for what seems like forever but keep getting sidetracked. I'm going to try a double brew day this weekend to keep my fermenters from collecting any more dust going to do the strawberry and a batch of Brett pale ale that I'm going to abuse with a massive amount Chinook & Simcoe.

I let our barrel dry up again. Sealing it up with hot water soaks as we speak.


Need to brew a big arse RIS and let it sit until winter or something.

Next on my list is an imperial version of my coffee vanilla porter to put into the barrel.

After the regular version I'm brewing right now for LSUBoo's wedding.

I do want to keep it until winter, but would it be best to bottle it store it or keep it in the fermentor?

Mmmm.... I'd say do everything you can to insure that it ferments out and isn't too "hot" and then stick it in bottles and let them sit around for a while.


I just put two handles of the cheapest bourbon I could find in the barrel.

Yum.

Weather is looking pretty crappy to brew this weekend. Bummer. I was hoping to brew a low gravity lime saison.

Brewing a breakfast brown ale (brown ale w/ chocolate, coffee, and vanilla) tomorrow morning.

Looks like the weather will be shitty, but I have to knock out this last beer for WYES.

Update on HB1036: the bill is set to be voted on Monday in the house which is the last day of session. The senate still listed as pending conference.

There was some at the 2013 jamboree. I know I had some of Suspense's beer. I brought a farmhouse ale. Not usre if Boo or B had any there as I got there late and it could have been consumed already.

Cutting it close, I see. I'd like to brew another one for it as I'm not happy with my funky pale ale, but at this point time is against me and I'll just have to bring it. I have one good beer and one meh beer. I blame it on not brewing at my house. That's my story and I'm sticking to it.

Talked to a lobbyist friend. She says that there's 100% chance this passes. The whole committee is comprised of Troy Hebert's people.

yeah, I end up doing this every year... It's a small brown ale and I have a HUGE starter so it should ferment clean in 4-5 days.

I was told the same thing by a friend who works at the capital. She said the only chance this wont pass is if it doesn't see a vote.
