I left my hoppy farmhouse in the fermenter for 5 months. You're good.
And if anyone wants some Conan, it's been in stock as of late at Yeast Bay.

dry hop it a few days before you bottle it and it will be great
about to get started on a rye ipa. Got a question for you guys:
Im using extract with steeping grains, and in the past I have been heating about 2 gallons of water to 152 or so and steeping the grains in it.
Would changing the volume of water I am steeping in make any difference?
I was thinking of going ahead and heating the entire volume of water I will use and just steeping in it, then bringing it to a boil and adding the extract.
any harm in that? The downside on a day like today is that I would steep inside, where its easier to maintain temps as opposed to outside where it is cool today

That's what we used to do.
Heat the full volume of liquid with the steeping grains in it until the temp gets to 170 and then pull the grains out.
Heat to boil.
Turn off flame and add extract.
Return flame to bring to boil.

Good idea. I hopped it with centennial and citra already. what would you suggest for a dry hop?

MOAR CITRA!
but no, really, a wise dude once told me that nobody ever tasted a beer and said "this has too much citra."

cool. this is based off your grapefruit rye recipe, so its bound to work for me too, right?

I'll see if brewniverse has anymore citra. If not maybe some galaxy.

Most likely, yes.

if they don't, maybe cascade or Amarillo

got a little situation: I missed the volume of water to be absorbed by the grains, so I ended up with 10 gallons bre-boil rather than 9, and a gravity of 1.042 instead of 1.05
easiest thing to do is boil it down to about 9 gallons before adding my 60 minute hops and then proceed like normal?

Absolutely. Boil away volume before hopping.

other than probably running out of propane, I got this shite whipped
eta: the extra boiling gave me time to go to the store and get more propane, and get the ice I forgot earlier. got back, checked the gravity and we are on target at 1.05. Let's do this!

I ran out of gas on my last batch, but luckily it was right at the end of the boil. No brewing this weekend but got a lot of stuff on tap starting next weekend:
- doing another batch of Brett pale ale
- dry hopping some 1 st year lambic and brewing a batch of fresh lambic to replace this pull
- brewing 20 gallons of simple saison to put in my 1/2 barrel
Maternity leave is going to be good to me

Well I learned a valuable lesson regarding nut extracts, don't use them. Used some pecan extract in a nut brown ale at an attempt to mimic southern pecan. Been in the bottles for 3 weeks but still pretty undrinkable. The extract flavor is very strong and separated from the flavor of the beer.

No telling how much pine pollen is in this beer.
Hope it's tasty

all done
still couldn't get the junk in the bottom of the kettle to "cone" but I made enough that I didn't have to fight to get 5 gallons too much. well, almost 5 gallons into the fermenter. hit the OG on the money.
successful brew day

Normally Mondays suck. However it is now Zapp's Week
I had to move all of my beer yesterday to do some house repairs, and one of my brewing friends who was helping me was taken aback by how much beer I had available. Looking at it as a whole, I have 45 gallons of beer in kegs and then another 10 in a fermenter about to be ready to keg. So yea, that is a lot.

I don't know how the hell I would keep all of that cold, but it would be fun trying.
