Well, my yeast finally came in yesterday. However, my old yeast that i used is working pretty well. I guess i made a great starter. The airlock is still bubbling, and that fermwrap is pretty damn awesome. I'll be checking the gravity sunday. I'm anxious to brew again.

Anybody need any Wyeast 3711 French Saison yeast?

After 6 days my pale ale is at 1.016, just 2 points off target. Went ahead and dumped 3.5 ounces of hops into the fermenter, and will bottle (maybe keg) next weekend.

Update for Swamp Rat. City-wide shutdown made us reschedule for next Tuesday. Pass the word along to any New Orleans people. Meet around 7-7:30 at 12 mile limit next Tuesday.

Messing around on brewers friend today for a pinapple wheat. This is my first attempt at this so I'm not sure this will work, but it gave me check marks in all the categories let me know what y'all think.

3lb wheat dme
3lb Pilsen dme

.5lb caramel/crystal 20l
.75lb American wheat
1oz citra pellets(secondary?)
Wyeast American wheat 1010

Plan on adding pinapple, just not sure when I would need too

OG 1.054
FG 1.013
ABV 5.4%
IBU 29.35

How are you getting 29 ibus without hops in the boil?

99% of the time you need hops in the boil. At minimum you need hops added over 190 degrees or so to get some sort of bitterness. You're not doing a light lager or sour or anything like that, so you need probably minimum 15 ibu to give it a chance to round out. I'm a fan of low AA noble hops for my 60 minute additions. Your fruitiness is going to come from the pineapple, citra, and possibly whatever yeast you use. Your bitterness has to come from early additions to balance the fruit sweetness.

Bottled my first ever homebrew batch last night. It went fine except the bottle bucket leaked. I tested it before and was only able to get it to a very slow drip. Of course when I put beer in it, the spigot shifted and started a decent leak. I ended up getting it under control, but it leaked the entire time. The thing was brand new, but it was like the washers it came with were too small - they fit inside the pre drilled hole.

All that said, bottled about 52 beers of Kolsch ale. Hopefully they'll be ready for a drink in a couple of weeks.

Taste tested my BIPA yesterday. I am impressed with myself. I was going to consider dry hopping it but I think I will just leave it as it is. The problem now is keg space.

Less than two weeks to Iron Brewer. Everyone should be there.

Always dry hop it.

Brewed again this weekend. All Galaxy IPA with 4.5 or so in the boil and another 2 oz for Dry hop. Put it on top of the yeast cake from the Iron Brewer IPA and it's going as strong as ever. I'm beginning to like this second use I'm getting out of a yeast pitch.

Bo Pils brewed on Tuesday is already wrapping itself up and I'm raising temps slowly on it this week.
