Hibachi Style Rice

Does anyone here have a good recipe for Hibachi fried rice? I've tried several times over the years with my Blackstone griddle but it never comes out right. We've experimented with different sauces, tried fresh rice and day old rice, nothing gets close. I know they use soy sauce but they always add a second sauce that I don't know what is. We can get the meat right(steak,chicken,shrimp) but that damn rice is tricky.

Make a ring out of your rice and put a big ole dollop of real butter and a scoop of garlic with a little ginger. Then fold the rice into the butter.

key is old rice. rice that is cooked or dried out a bit.

in your rice add onion and some graded carrots, and green onions. think of how they cook it. put it int he center with just the rice and veggies, and let it crisp a buit then moved off to the side to finish cooking. no sauce till the end.

soy and some teriyaki sauce. my fried rice is just as good as the restaurant.

bigger question is, do you get the dipping sauces right? I have done a ton of research and found perfection on the ginger sauce and mustard sauce. IDGAF about yum yum sauce because thats stupid.

Hibachi rice at a good place (Shogun In Metry) is one of the best foods ever

Thread from week or so ago. With lots of pics. I make it once a month on my blackstone. Family and friends love it.

TG Fried Rice Thread

I use:
Cold rice thats been in fridge for 2 hours uncovered
Carrot
Onion
Bean sprouts
Unhealthy amount of garlic and butter
Eggs
Green onions
Rice wine vinegar
Soy sauce
Hoisin sauce
Salt and pepper to taste
Toasted sesame oil
Sesame seeds

This man just spilled the beans. This is the answer. Put soy, butter, garlic, salt, and sesame oil until it tastes good. If you think it is healthy, you haven’t added enough of these things.

The local place around the corner starts with finely diced bacon. Gives the rice a great smokey flavor.

Interesting. I love hoisin sauce. However, I've never used it in my fried rice. I use oyster sauce instead. Also, use schewan peppercorns to compliment the sesame oil smokeyness.
