Help! My ground beef keeps coming out mushy

Making some simple dishes like hamburger and meatloaf, it comes out mushy, almost like dog food. Hamburgers on the skillet, meatloaf's in the oven. The meat looks cooked and it's at temperature...

Any thoughts about what's going wrong?

Are you adding a lot of filler such as bread crumbs and eggs? I'd cut down a little.

you may be handling it too much... the lest amount of handling is key...

What is the fat percentage? The really lean stuff is somewhat mushy like that. I prefer the cheap 80/20 for burgers. Fat is your friend. I don't really use ground beef in other ways.

Are you "steaming" it? Don't cover so tightly?

1. don't add all kinds of filler
2. handle it less
3. make sure it's totally defrosted
4. make sure the grill and over are preheated
5. don't crowd your pan or grill or it won't get as crisp/textured.

although you dont want to handle too much you should form solid firm patties and they should fall apart. dont flip and move them around too much while cooking, and make sure you're starting with a preheated surface.
