HEB pork loin

Currently on special for $1.20 lb. Bought a 9.5lb for just under $12. Made up a nice batch of chops and a nice roast to make pulled pork. In these times figured some may like a heads up.

Pork loin can be dry if it's overcooked. America's Test Kitchen had a video where they cut it to lie flat. From the long side they slit it 3/4 the way through. They turned it upside down and did the same from the opposite side. Unfolded, it was easily pounded flat. They slowly sautéed some brown butter with a little garlic near the end. Salted the loin, sprinkled about a teaspoon of sugar, then the brown butter. Refolded it, then tied it with cooking twine. Brown it, then into the oven for a slow cook to 140 internal. Loosely cover and let rest.
It's really good, and not dry.

My wife likes the McCormick Stubb bbq slow cooker pulled pork for baked potatoes or tacos. Loins do real well for this.

The way I’ve been doing it is awesome. Pan sear the full loin with seasoning in a cast iron for a bit, once you have some crust into the oven until 140 internal. It’ll be pink but that is why it’s delicious. If you want it even better, wet brine for 24 hours.

Never seen or heard of someone pulling that lean a piece of meat

Except that bacon fat won’t find its way Inside the loin. But if you’re just gonna slice and eat it, hell yes

No, meant pull is not an option. I love the bacon wrap, make the loin super tender to slice

Cut it into 2” chops . Coat in mustard and season with an all purpose rub. Grill over charcoal until 140 IT. Let rest for a few minutes. No sauce needed .

Do this, it was awesome. It was fun to use the iron skillet to sear first and then in the oven and then back to the stove for sauce.
