There is a farmer in Rayne that sells a couple hundred sacks a day that he purges.

They probably legitmately purge their crawfish by sticking them into a tank for 24+ hours with an aerater. The "purging" most people do at home just cleans the dirt off the crawfish and does not affect the inside of the crawdadds.

He does sell most to restaurants, you are correct. But he also sells to individuals and buyers, or at least he did. It's been 4-5 years since I've been over there, but I used to pick up a good bit from him.

It will scare the shite out of you driving thru all the back woods roads to get there. Actually looks like a bikers bar tucked back into nothingness. Kinda like Deliverance.

But you will find no better crawfish.

My usual go-to is Cajun Claws in Abbeville, is it worth it to make the drive out to Hawks?

You have to be talking about prevost. They are the only ones I know of with the purge tanks. I'm sure he sells to the public if they have extra but they have to take care of the restaurants first.

If I'm boiling at my house and have time I'll go over there and drop a few sacks in an empty tank. Most of the time I just rinse them though

Mine too, because Im from there. But Hawks is a 3 beer drive from Laffy and well worth it. IMO.

I live in New Orleans, but when I'm in that area I'm usually staying at my in-laws in Abbeville. Maybe we'll check out Hawks next time we're in.

If it's that crap where they boil in salt water, drain, then pour the seasonings on top.....you people can have that trash.
