I've made it a few times now. Comes out really good. ..

Minced onion, seasonings, Greek yogurt and ground meat rolled out as thin as possible in parchment paper then rolled up then baked. It's really really good.

It's really good. Works with ground chicken too. In indy around with spices and levels of onion and garlic. Also you should make Tziki sauce and white garlic sauce with it.

Last night I made a halal style bowl (what they call it in NY, it wasn't halal meat). Beef , rice, lettuce cucumber, pomegranate, cashew topped with red and white sauce. I basically combined the rice Bowl from kG bbq and the rice bowl from Halal Guys.
Was so good. I just made it up as I went along.

Yep. It's a decent hack.

I've also adapted it for cheese steaks & carne asada.

Makes a decent sandwich and excellent tacos.

My husband makes an excellent tzatziki sauce bc he makes spectacular falafel.

I can’t wait to try this, though!!

IMO it's better to emulsify the ground meat (chuck and lamb) in a food processor for gyro meat. I have not tried this hack yet, I usually form a square and smoke it.

I did do it one time in my robo coupe I did my onions in it and mixed it with the garlic. The texture was closer to gyro that time. But I haven't used lamb.
