I worked right around the corner from the seasoning plant. Always wanted to stop in. Not sure why, its not a restaurant or anything. Just did,lol

Get the first one, Darla, Louisiana Kitchen. His later recipes use his spice mixes and are changed a bit from what I've seen in looking at the restaurant website. His initial recipes are the best.

Love the flavor and heat he brings. Stood in long line on sidewalk in early days waiting for 5:00 opening . Still feel bad about young petite female Dr. from Philly (not Ms.) down for her brother's graduation from Tulane next day. During our hour or 2 wait in line I volunteered to get us Pat O's hurricanes in go cups so she could experience 2 tourist musts at once.. We were seated after 3. Before ordering young brother asked waitress to check on sis in restroom. Last saw of them he was carrying sis out over his shoulder looking for cab. Wonder to this day if she ever got to taste,K Paul's.

I wonder how many tons of Andouille sausage that man has consumed. Seriously, the cover of Louisiana Kitchen makes me cringe. Awesome book though.

Jeez, I remember when he was cooking on Chartres and we could go have a full meal with "blackened redfish" for $8.99. Sigh.
