Hamburger Steak with onions recipe

So like a dumass I didn’t save a recipe that was recommended here and I searched without luck. It was a local chef if I’m not mistaken. The name Zydeco comes to mind but not certain. Has several other recipes out there too. Any help is welcome

For the ground meat per pound,
2 tsp kosher salt half that if table salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1/2 tsp cayenne pepper
1 egg
1/4 cup bread crumbs
4-5 dashes of wistershit sauce
Slice a sweet or yellow onion into thin rings. Gently form thick patties with the seasoned meat. Brown them well on both sides and remove to a plate. Into the drippings add the onion and cook on medium heat until most of it is clear and browned. Add a couple tablespoons of flour and cook that with the onions for several minutes. Slowly add beef broth a little at a time over high heat to start building a gravy. Once you have the gravy as about half the thickness of the patties, put them back in the pan. Add some more wistershit and season to taste. Cover and simmer for 20-25 minute on low heat.

Hamburger Steaks With Gravy
COOK TIME: 2 hr
SERVINGS: 4
INGREDIENTS
• 2 lb Ground Beef, 80/20
• 1 Yellow Onions, large
• 1 can Beef Broth
• 1 cup Water
• 1/2 Stick Butter
• 1/4 cup Flour, all purpose
• 1 tsp Cajun Seasoning
• 1 tsp Garlic Powder
• 1 tsp Worcestershire Sauce
• Salt & Pepper, to season patties
PREPARATION STEPS
1. Form the ground beef into 4 large patties. Generously salt and pepper the outside of the patties and set aside.
2. Heat a large cast iron Dutch oven on med high heat with just a splash of vegetable oil. When oil is hot, sear the patties two at a time. Your goal is just to put a crust on the patties, not to cook them through.
3. While patties are searing, chop the onions. When all patties are seared well, remove them from pot and add onions.
4. Use onions to sweat and deglaze the fond on the bottom of the pot. Stir and caramelize onions for approximately 20 minutes until well browned.
5. Add 1/2 stick of butter to onions and let it melt. Then add the flour and stir well. Stir as long as you would like until the color is dark brown. Times may vary but about 10-20 minutes is about right.
6. When color is good, add 1 can of beef broth and 1 cup of water. Stir well and add Cajun seasoning and garlic powder and Worcestershire sauce. Bring to a light boil and then reduce heat to simmer for 20 minutes.
7. After 20 minute simmer, add the patties back in, bring to a gentle boil, then reduce heat to simmer and cover for an hour. Stir once or twice. Serve with rice or potatoes.

The above recipe is my go to and it is 95% the Cajun Ninjas recipe. The patties are huge. Notice that the interior of the patties are unseasoned. If you want to, you can salt the meat **lightly** but be careful because there is sodium coming from all directions in this recipe. The butter, the Cajun seasoning, the broth, the rice, and the W sauce are all salty. Just be careful. Full disclosure, every once in a while I just buy the half pound patties at Walmart for this recipe. It comes out perfect every time.

I copied this recipe from one of your posts a while back and have made it twice. Serve with mashed potatoes and some green veg.
Wife said it is one of her favorite things I've cooked. Based on what she grew up eating, this is her kind of comfort food.

I use your original recipe all the time. My family loves it, very simple and good. Only thing I change is buy pre formed patties from the store and just salt/pepper them.

We have this at our house about once every 2 weeks. I serve it with mashed potatoes and roasted broccoli. There are never leftovers. It is probably the meal that my family all enjoy the most.
I prefer gumbo and etouffe but my non coonass wife doesn’t like etouffe and one of my kids says she doesn’t like gumbo, even though she eats it like a starving orphan every time I make it.
