I had to run an errand this morning and while out I realized I needed something to eat this morning.
The other day I picked up a package of these Bunny Bread Poor Boy Buns that looked interesting. They're basically like hamburger buns but shaped like large hot dog buns.
I decided I felt like eating a cheese omelet but things progressed as I was fixing it. It was a two egg omelet that I added a slice of ham and shredded cheddar cheese to. I also thought It would make a nice sandwich so I pan toasted one of those poor boy buns with a lil butter and set aside. I used a large pan so the eggs would spread out and make for a thin layer. Added the ham and cheese and proceeded to roll it instead of folding it over. Done it was placed on the bun and ready to eat. Well, I did sprinkle a lil Cajun Bait Garlic blend on it.

Bun toasted.

Ham and cheese added and rolling.

Almost ready to eat.

Now it's ready to eat!

Damn! That was really delicious!!!

So normally I'm an avowed hater of squishy supermarket white bread, and industrial bread in general. But a breakfast sandwich is one of the few times where the bland, flabby nature of Bunny is an asset rather than a liability.

I love a good breakfast sandwich...yours looks tasty. I'd have added some fresh chives and probably used gruyere/swiss, but otherwise, I'd eat it. LOL.

I'm currently stuck in a breakfast sandwich rut of sourdough english muffin, toasted, w/sharp cheddar, a soft fried egg, and two pieces of griddled canadian bacon.

I got these at Rouse's. I looked for them at Walmart and they didn't have them.
They come 6 to the pack.

Looks good. No way I’d be able to roll the eggs like that. It would end one jumbled pile of egg cheese and ham.
