I thought you were going to say you went to Lafayette and had some of those boiled in salt water with the seasoning dumped on top. Those are my personal worst.

What is a rule in New York is not the rule down here.
As a former prep cook at Sammy's, I can promise you the fish doesn't last long enough to come close to turning.

That could be a lot of peeling. As a restaurant/market, it's hard to predict the demand for the day.

Going to Sammy's on Friday evening or Saturday around 1 will most likely be a fresh batch! I totally could see it being reheated crawfish Sunday evening.
