I feel like this has been their MO from the beginning. Put out tons of crawfish with consistent quality which they usually does IMO

I thought you were going to say you went to Lafayette and had some of those boiled in salt water with the seasoning dumped on top. Those are my personal worst.

Depends on the restaurant. A seafood joint is in the clear. Steak place? Not so much.

I've read all his books.

What is a rule in New York is not the rule down here.

As a former prep cook at Sammy's, I can promise you the fish doesn't last long enough to come close to turning.

That could be a lot of peeling. As a restaurant/market, it's hard to predict the demand for the day.

Going to Sammy's on Friday evening or Saturday around 1 will most likely be a fresh batch! I totally could see it being reheated crawfish Sunday evening.

The worst crawfish I've ever had were dry

No juice or anything. Meat was dr. What causes that to happen?
