What can I do with them besides salsa?
I am growing WAY more than I need, and they are huge! (Subtle brag)

Always an option, but I make pepper jelly out mine



1/2 pound habanero peppers
4 cups granulated sugar
1 1/4 cups cider vinegar
1/4 cup lemon juice
1 teaspoon salt
3 ounces liquid fruit pectin


Cooking Directions...

I use a small food processor but you can chop them until they are very finely chopped
Drop that hot shite into a pan
Add sugar, vinegar, lemon juice, and salt.
Bring to a boil then reduce heat to low and simmer for about 10 minutes.
Return heat to high and bring mixture to a rolling boil.
Stir in pectin and boil for about 1 minute, stirring constantly.
Remove from heat, stir again
Put "Hot jelly" into jars and cover.
Process jars in a boiling hot water bath for 10 minutes.
Remove and let cool overnight.
Then get ya some triscuts and cream cheese

They are excellent with eggs.

It's a good idea to dry a bunch and grind them as needed. Crushed dried habanero goes great with just about everything. They also freeze well if you're going to cook with them. I grow habaneros every other year and keep enough frozen and dried to carry me through the off years (of which this is one).

Incidentally, if you dry habaneros in a dehydrator while simultaneously roasting garlic in the oven, the aroma is intoxicating. It's almost like getting high.

Dragon fruit. Habenero. Small amount of orange and blend.

You can use it in marinades or simmer sauces, use it in chili, make your own habanero hot sauce, soak them in vodka and use that in your Bloodies, or the jelly idea posted earlier. and speaking of salsas, mangoes or peaches work perfectly with habaneros

Into a blender or food processor:
1 small bunch scallions rough chopped
3 large cloves garlic
1 small onion
5 habaneros or scotch bonnets seeded
Juice of 1 lime
3 tbsp Soy Sauce
3 tbsp olive oil
Heaping tbsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp allspice
1 tbsp ginger (fresh is better)
1 tbsp fresh thyme or 1 tsp dried
2 tbsp brown sugar

Blend until smooth. Covers 2-3 lbs chicken. I usually marinade in a gallon bag for a day or so.

That's close to my recipe which is a modified version of the one in the Sugar Reef Caribbean Cookbook. Ginger seems like an unusual ingredient in a Caribbean dish. My recipe calls for crumbled dry sage instead. (I'm no purist, though. I might give the ginger a try.) Also, a quarter cup of orange juice could be added to brighten things up. I've also experimented with adding a little dark rum and that works too.
