Gumbo With Crawfish In It?

Why do people not put crawfish in gumbo? I can’t ever recall having crawfish in any gumbo I’ve ever eaten. What got me to thinking about this question is my wife is making crawfish étouffée that we usually pour over her amazing cornbread dressing.

My best memory of gumbo is the one grandmother made with shrimp, sausage, crab, & crawfish.
I vividly remember the color, texture, aroma & taste. Probably the last gumbo I had that she made.

I use crawfish tails in just about every seafood gumbo I cook. That is why I usually get a couple 40 lb. sacks extra every spring to peel and save the tail meat, fat and clean lots of heads for making crawfish bisque.
I also use the tail meat for making crawfish pies and etouffee. I usually wind up with around 10 lbs. of tail meat every spring that I vacuum seal and freeze.

Thanks. Guess I’ve been missing out all these years of my life. I honestly can’t remember seeing any crawfish in gumbo that I’ve been served. Probably because I’ve either eaten chicken and sausage gumbo or seafood gumbo. I’ve had fish in my gumbo which sort of made me think it was like adding crab far as texture is concerned.

Must be a South Central La thing. I hardly ever notice it, but I wouldn’t see a problem.

Next time you make seafood gumbo, get some bay scallops, which are the smaller of the two with sea scallops being the big ones.
Put them in just like you would shrimp or oysters near the end. They add a nice texture to the gumbo and are like the "eye" of the oyster where they attach to the shells.

Thanks for the tip. I live about 30 minutes from Joe Patti’s and I see them in there all the time. Normally I buy the big ones and sear off in a hot skillet really quickly. I bet those bay scallops are good in a gumbo.

It might be because crawfish season doesn't coincide with cold weather season when most people make gumbo.
Anytime there was a boil (crab, crawfish, shrimp) you peeled even after your were full from eating.
Everything was packaged and frozen or divided amongst the participants.
The host always way over-bought crawfish so all attendees could take some home.
That's just the way our family did things.

I don’t make seafood gumbo often but when I do it’s shrimp, crawfish, and oyster
Occasionally I do leave out crawfish if I can’t find any

I personally don't care for them in gumbo. I like crawfish straight up to enjoy their flavor. That being said I wouldn't turn down a bowl that included crawfish.

I don't do it, but I can't think of a valid reason why it wouldn't be good. Crawfish fat would add another flavor level.

As to crawfish in gumbo, I've had it before and it's just fine. It's just that there are so many better things to do with crawfish that we never use them in gumbo in our house.

I make shrimp and crab Gumbo very often. If we eat all the shrimp out of it, I freeze it then take it out next cold front and toss couple packs Crawfish in there. Delicious
