It's worth asking the produce department if they'll chop them. Back when I was a teen, I would do 50 lbs every Friday in one of those french fry choppers. Once you get in a rhythm, it doesn't really take that long to do.

Use something like this if you do not want to use pre-packaged. It really helps speed up the chopping process and assure each "chunk" of onion is the same size.

Probably 80-90% onions but I use it all the time. Their plant is in my home town. Add 1 small bell pepper per container or add 1 big bell pepper per 3 Guidry's containers. Need to add minced garlic separate.

But to be fair, if I'm ever cooking for a huge group and multiplying my recipe by a lot, I’ll buy the pre chopped Trinity. And If I'm multiplying my recipe by 8, for example, I buy 8 of those trinity's.

They are mostly onions, but you can find some that have more bell peppers than others. I think they’d be fine, but you might want to get a stalk or two of celery and a bell pepper or two and do a rough chop with Guidry’s as the base.
Personally, I’d probably avoid frozen veggies for a tailgate jambalaya. We used to use Guidry’s and it was fine.

invariably I wind up preferring more celery and bell pepper than onion in my trinity. Especially more celery. The pre cut stuff is a waste of money and an inferior product

No one said it was hard.
But if I am using my 75 gallon pot I am not sitting there and hand chopping onions, bell peppers, and celery for an hour and a half. And then having to chop meat.
But I'll even use it for my 5 gallon pot because it saves time - and like I mentioned, it's much easier to get someone to help you since they need no skill level at chopping to pull a lever. It's the reason they have them in high volume kitchens. You don't have to train anyone, and they don't even need basic knife skills.
