It was a pretty dumb show. Basically Food Network would find some local cook that made a popular dish, and Bobby Flay would show up to humble them and cook his version of the dish. Flay won like 95% of the time, and while it was good exposure for the small business, it felt more like Flay saying "stay in your lane, rookie."

Other than a taco of the month at White Star at the new restaurant, we've never had had brisket on the menu. So you're simply mistaken there. The smell of our brisket pretty much never wafted through the food hall.
I'm not sure what's confusing about the decor at our new restaurant. Perhaps the conspiracy theories are lost on you, or perhaps you never understood our government puns in the first place? Either way, your confusion is confusing to me.
As for music choices, that's up to the bartender and management each day. Maybe sometimes it's a bit out of left field. I don't know what has playing, so I'd need more info. But I like empowering the staff and not making them listen to the same thing every day.
The happy hour is generally intended for the bar. It's printed on the bar menu as well as viewable online. The front cashier should know about it, so we'll work on that. If you ordered from the front register, it would honor the happy hour pricing, so there's no concerns there.
Prices have indeed increased a little. Hopefully you've paid enough attention to the world around you since we opened in 2018 in a food hall to understand why.
As to the quality of the food, I am definitely sorry to hear that. I'd hope you would bring that my manager on duty or send me a personal note before writing a public Yelp! review calling me out, but here we are. Our food should be better than that. However, the Bovine Bureaucracy has NEVER featured brisket, so it is difficult to know how to assess your judgement here.
We are on the $15 price point on Restaurant Week, the lowest price available to customers, to offer a value. Perhaps we could do something more off-menu for more money, but with current market and labor conditions and that didn't make sense. What did make business sense was to participate in RW as the ONLY $15 restaurant and offer a great bang for the buck and get people in the door to try our food. There's a lot of food in your photo for $15. I'm sorry it didn't meet your expectations.
We all miss the good old days before covid. Sadly, that's not reality anymore. Sigh, indeed.

Oof. Jay always seemed like a nice dude but it sounds like all of this has really gone to his head. Also, Gov't Taco was usually like my 5th choice when going to White Star
Chow Yum Phat was there and now is thriving as a brick and mortar. I eat there at least once every couple of weeks and it's always great. It's almost like focusing on the food and the dining experience instead of getting your head stuck up your own arse on branding nonsense is a better way to go.

That's pretty damn bad and embarrassing for Jay. Why don't owners understand it's best to leave simple replies addressing reviews?
Here's what he could have said: We loved White Star but moved in order to take advantage of expanding business opportunities. We will review our customer experience to see what we can improve based upon your review. We are battling rising food costs like everyone else. Please know we are striving to offer specials for our customers, including a $15 price point for Restaurant Week.

Five years ago I asked why this board pretended he was great, no one could explain the fascination.

Think about it.
Edit: when the slap dick poster above me can craft a better response than the grandiose manifesto written by JD, maybe it's time to step back from responding to fricking yelp reviews and actually fix some of the problems you're currently supposedly addressing.
