Just to play devils advocate a bit, I feel like Elsie’s was a bit of a new concept that has been very well received.

While that may be true, actual Mexican owned taquerias in Baton Rouge just do it better than hipster gringos.

I thought Gov't taco was excellent in the old location. They had some taco with carrots that was unique and tasty. Everything was good though. Maybe a little expensive but nothing to complain about because the food was great.

I mean they’re two different concepts. If a want barbacoa or carnitas I’ll go to a taqueria. If a want wacky hipster tacos I’ll go to a place like Govt Taco or Torchys.

That's pretty standard pricing for white person taco places. If you want cheap tacos, hit up a taco truck where they're $1.50/ea. White people tacos have things on them like aioli, fresh mango, fried shallots, fermented carrots, and whatever else. Not that there's anything wrong with that as I enjoy those from time to time, but they cost a little more than your typical al pastor taco with onions and cilantro.
