Got two trays of crawfish in fridge from Sunday…still good?

Remove the fat is what I've always heard.

Full disclose I wouldn’t have an issue with it, but really for “safety” it depends.
Did the leftovers get left out for multiple hours while everyone enjoyed themselves and then when cleaning up they were put in the refrigerator? Or were they placed in the refrigerator shortly after cooking?
The “correct” thing is if they were left out then toss them. I’m on the side of if they are in a shell they are fine and I would peel and eat.
I don’t typically remove the fat when freezing, but if it’s been a while before freezing it might be best to do so. Rancid fat will ruin all of the crawfish.

I could never eat boiled crawfish cold or even warmed back up. Fresh out da pot or pop tails.

3 days in fridge? You're more than fine. I go 5-7 routinely in my beer fridge set at 33°. Peel a few, eat one, peel a few, eat one. Never a problem.

I think they are greet cold especially when sucking the heads. I can taste more of the spices when it’s not piping hot out the boil.

I agree. I love them cold especially if they have a good amount of fat. It firms up and is easier to get out when eating.

not to hijack the thread, but I remember seeing somewhere that what we call fat is actually their organ similar to our pancreas and not actually fat. I've never taken the time to research and confirm this, but it's delicious either way.

If you cook the crawfish right and leave the leftover in the fridge, it's still good and comparable to cocktail shrimp. It also seems the flavor is more concentrated.
