Never had them but the sandhill is referred to as the ribeye in the sky buy people who hunt birds

I smoked one and made a gumbo out of it. Smoked, deboned made a stock with carcass etc. The upper part of the leg was a little weird to debone if I remember right, as far as getting the meat off the sinew or whatever. But it was good

Yeah low and slow is the best for sandhill if not breast.
