It's one of those gloomy Sunday mornings in southeast Louisiana and a perfect one for some homemade beignets.

My old T-Fal electric fryer crapped out on me so I had to use a fryer over the gas grill burner.

Pretty darn good with a hot cup of coffee!!!

Friend,

Superb effort and results! May I ask what type of oil you use?

Personally I'm partial to the thinner and crispier type, but those looked damned good as well.

These can also be eaten like sopapillas. Bite or punch a hole in it and squirt honey into them.

For this I used fresh canola oil. Almost any oil is good for frying as long as it's fresh or pretty clean.

I may have asked this - but what do you use to shoot your pics? A phone?

They are always perfect.

The problem with Cajunate's pictures is they make me want to have what he's having.

I use a Sony 5N that's at least 6 years old. I've loved that camera since I got it. I know there's better but I can't bring myself to replace it.
