Gloomy Sunday Morning and Homemade Beignets

It's one of those gloomy Sunday mornings in southeast Louisiana and a perfect one for some homemade beignets.
My old T-Fal electric fryer crapped out on me so I had to use a fryer over the gas grill burner.
Pretty darn good with a hot cup of coffee!!!

Personally I'm partial to the thinner and crispier type, but those looked damned good as well.

These can also be eaten like sopapillas. Bite or punch a hole in it and squirt honey into them.

For this I used fresh canola oil. Almost any oil is good for frying as long as it's fresh or pretty clean.

I use a Sony 5N that's at least 6 years old. I've loved that camera since I got it. I know there's better but I can't bring myself to replace it.
