In Clinton, LA on the courthouse square there's a soul food place called Carter's Home Cooking. On their menu is a hamburger, cheeseburger, and a Carter Burger.

I asked what was different about the Carter Burger. He smiled and said, "It's a cheeseburger with a fried poke chop on top."

It's was amazing.

Beat your meat first. I like them about 1/2” thick, then pounded thin. Lots of ways to batter/fry, but my go-to is a light season and flour dust, followed by egg wash and a load of Italian breadcrumbs, fried in a shallow pan of avocado oil. This was my favorite thing my grandma used to make, and it’s still one of my favorites to make.
